Ceylon Cinnamon vs Regular Cinnamon

The type of cinnamon you find in supermarkets is most likely Cassia as 90% of the cinnamon imported into the U.S. is Cassia.
Ceylon Cinnamon is lighter brown, softer, harder to find, sweeter tasting, but sadly it is more expensive due to all the above. Cassia Cinnamon is cheaper, tastes slightly more bitter and alarmingly has a toxic flavouring substance in it. This flavouring substance is called "Coumarin" and typically Cassia contains 1000 times more of this compared to real cinnamon.
